Sugar Free Chocolate Mousse
The Perfect Valentine's Day Treat!

Mmmmm... Who doesn't love the decadence of rich, chocolate mousse? This special treat can be enjoyed on Valentine's Day or ANY day! And if you or your sweetheart are trying to watch your sugar intake, then this recipe is ideal, as it's a no sugar version of this classic French dessert.

Makes 4 servings
Ingredients:
- 1 Tablespoon cold water
- 1 teaspoon unflavored gelatin
- 2 Tablespoons boiling water
- 1/3 cup Splenda
- 1/4 cup unsweetened cocoa powder
- 1/8 teaspoon salt
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- Optional garnish before serving: 1 cup whipped cream, lightly sweetened with Splenda
- Optional garnish before serving: Sprinkle with fresh strawberries or raspberries for a festive splash of Valentine’s red
1. Chill a medium-sized mixing bowl in the refrigerator.
2. Meanwhile, place the cold water in a small bowl. Sprinkle with gelatin and let it stand for 1 minute.
3. Add boiling water and stir the mixture until the gelatin is dissolved. Set that bowl aside.
4. Combine Splenda, cocoa powder, salt, whipping cream, and vanilla extract in the chilled bowl until roughly mixed together. With an electric mixer on medium speed, beat mixture until it becomes stiff but do not overbeat.
5. Beat in the gelatin mixture until it is combined. Again, take care not to overbeat to maintain the proper texture.
6. Spoon the mousse into decorative dessert dishes or fancy glasses and chill for 1 to 2 hours before serving.
7. Optional: Top with whipped cream that has been lightly sweetened with Splenda and a dusting of cocoa powder if desired. Sprinkle some red berries on top for a festive touch.
