Recipe: Easy Winter Beef Stew

The beauty of this traditional, cold-weather recipe is that it’s made using bagged frozen vegetables—making shopping and meal prep a snap! When it’s cold outside, warm yourself with this quick and simple meal.
Ingredients:
· 2 Tablespoons vegetable oil
· 1/2 pound beef cubes, purchased cubed OR cut into 1/2 inch pieces
· 1 (16 oz.) package frozen stew vegetables (look for bags of frozen vegetables labeled “stew vegetables” in the frozen foods aisle)
· 1 (14.5 oz.) can stewed tomatoes, undrained
· 2 1/2 cups beef broth
· 1 teaspoon salt
· 1/2 teaspoon pepper
Directions:
1. Heat the oil in a stockpot and cook the cubed beef thoroughly.
2. Add the frozen vegetables and remaining ingredients. Mix thoroughly.
3. Cover and boil for 3 minutes.
4. Reduce the heat and simmer for 30 minutes or until vegetables are tender.
