Light, Easy, & Refreshing Summer Shrimp Salad

When the weather heats up, cool down with this amazingly refreshing summer salad. So light and simple to put together, enjoy it for yourself or double the recipe and treat a friend!

  1. 2 cups seedless watermelon, cut into 1-inch cubes
  2. 1 cup honeydew melon, cut into 1-inch cubes
  3. 1/2 pound peeled and deveined, cooked shrimp
  4. 1 cup green grapes, halved
  5. 1/2 large cucumber, seeded and chopped
  6. 1/2 small navel orange, peeled and sectioned
  7. 1/2 small red onion, chopped
  8. OPTIONAL: 1/4 of a jalapeno pepper, seeded and finely chopped
  9. 4 tablespoons lemon juice
  10. 2 teaspoons brown sugar
  11. OPTIONAL: Sprinkle of red pepper flakes


In a large bowl, combine the first 8 ingredients. Whisk together remaining ingredients. Drizzle over shrimp mixture and toss to coat. Refrigerate at least 20 minutes before serving. Toss before serving.
