Easy Roasted Spring Lamb

Ingredients:
1 lamb top round (1 1/4- to 1 1/2- lbs), trimmed
Salt and pepper
12 cloves garlic, chopped
1 Tbsp. chopped fresh rosemary
2 tsp. thyme
4 Tbsp. lemon juice
2 Tbsp. olive oil
Chopped fresh parsley
Directions:
1. Heat oven to 400°F. Season lamb with 1 teaspoon salt and ½ teaspoon pepper and place in roasting pan.
2. In a small bowl, combine chopped garlic, rosemary, thyme, lemon juice, oil, and some of the chopped parsley. Rub over lamb and roast 25 - 30 minutes, until internal temperature of lamb registers 125°F for medium-rare.
3. Transfer lamb to cutting board and let rest at least 10 minutes before slicing. Sprinkle with chopped parsley and serve.
