Flourless Chocolate Cake
This flourless chocolate cake is perfect for Passover—and any time you’re craving an intensely chocolatey treat! This yummy dessert is not only very easy to prepare, it also happens to be gluten free. It’s a winner!
Ingredients:
1 c. (2 sticks) unsalted butter, plus more for greasing the springform pan
8 oz. bittersweet chocolate, chopped
1 ¼ c. sugar
6 large eggs
1 tsp. almond extract
1 c. unsweetened cocoa powder, plus more for dusting the cake before serving
Whipped cream, optional, for serving
Directions:
1.Heat oven to 350°F. Line 9-inch springform pan with parchment and lightly grease.
2. In a saucepan on medium-low, gently melt the butter and chocolate, stirring until combined. Be careful not to burn the chocolate.
3. Remove pot from heat and cool slightly, about 5 minutes. Add the sugar and mix to combine. If the mixture is cool enough not to cook the eggs, whisk in the eggs 1 at a time until fully incorporated. Stir in the almond extract and cocoa powder until smooth.
4. Pour the batter into the prepared pan and bake until just set in center, 25 to 28 minutes. Cool the cake in the pan on a wire rack for 10 minutes, then remove the pan and let the cake cool completely.
5. Dust with cocoa if desired and serve with a dollop of whipped cream (optional).
