Easy Stove Top Chicken and Vegetable Stir-Fry

 

This simple meal can be adapted to whatever ingredients you have on hand, or whatever you can find in the frozen foods aisle of your favorite grocery store.

Best of all? It’s made in one pan for quick and easy cleanup!

Ingredients

For the Stir-Fry

  • 1 tablespoon olive oil for sauteing
  • ½ pound boneless chicken breast, cut into cubes
  • 2 cups frozen mixed vegetables (such as carrots, peppers, zucchini, broccoli, onions, sugar snap peas, mushrooms, etc)

For the Sauce

  • ¼ cup orange juice
  • ¼ cup water
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • Fresh or powdered garlic and ginger, to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Cook the cubed chicken, stirring regularly, until lightly browned. Add the frozen vegetables and cook for another 5-10 minutes, until desired softness. Remove meat and veggies from pan and set aside.
  2. Mix all sauce ingredients in a small bowl. Add the mixture to your pan and bring to a simmer over medium-high heat.
  3. Add vegetables and chicken back to the pan and stir to combine.
  4. Serve over brown rice or noodles for a filling and nutritious meal.
